- Bún
- Thin, round rice vermicelli noodles, served cool in salads or hot in soups.
- Bánh hỏi
- Very fine rice vermicelli woven into delicate thin sheets, brushed with spring onion oil.
- Bánh canh
- Thick, chewy noodles made from rice and tapioca flour, similar to udon.
- Hủ tiếu
- Flat or thin rice noodles, popular in southern Vietnam.
- Mì
- Wheat and egg noodles.
- Cơm tấm
- Broken rice: rice grains that cracked during milling. It cooks up soft and fluffy and is the classic partner for grilled pork.
- Cháo
- Silky rice porridge, also known as congee.
- Nước chấm
- The all-purpose Vietnamese dipping sauce: fish sauce balanced with lime, sugar, garlic and chilli.
- Mắm
- Fermented fish or shrimp. Pungent and deeply savoury, it gives many southern dishes their signature flavour.
- Bì
- Fine strips of pork skin and shredded pork tossed with toasted rice powder. Chewy and nutty.
- Chả
- A Vietnamese meat or fish cake. Cha gio is a fried spring roll, cha lua is pork roll and cha trung is steamed egg meatloaf.
- Gỏi
- Salad. Goi cuon are fresh (not fried) rice paper rolls.
- Chay
- Vegetarian.
- Lá lốt
- Wild betel leaf. When grilled it turns smoky and peppery.
- Phin
- A small metal filter that drips Vietnamese coffee slowly, straight into your glass.
- Lẩu
- Hot pot: a pot of simmering broth on the table where everyone cooks their own ingredients.
